Dry Salami:


At Paolini's we do a very high-end sausage called Dry Salami. It is a fermented sausage which is cold smoked and dried only.


In order to make Dry Salami out of your game meat, your meat must be 100% trimmed. This means no fat and no tendons; just red meat. The reason for this is because if you don't remove the fat and tendons from the meat it will go rancid.


We require a minimum of 10 kg of lean trimmed meat. This process takes about six weeks, and make sure to use the meat that you would normally use for steaks or roasts, as that is the quality we require.
